Recipe of the week, February fourth, 2008… American food from Howardsvegansoap.com

Howard’s World famous Breakfast Potatoes!

I make these ALL the time.. EVERYONE in my family LOVES them! My friends come from all around to eat them.. mmmmmmmmmmmm……

Olive oil
1 onion cubed
5 cloves garlic minced
5 potatoes cubed (or however many will fit in your pan!)
1 bell pepper (any color.. your choice!)
1 tablespoon cumin, turmeric, basil, rosemary, and thyme
salt and pepper to taste

Grind rosemary and thyme in a mortar and pestle. Add basil turmeric and cumin.

Heat oil over medium heat. Add onion and garlic. Cook for one minute.

Add potatoes, bell pepper, and spices. Mix around and cover. Cook for 20 minutes, stirring occasionally, until potatoes are soft.

Remove lid, and salt and pepper. Raise heat and cook another five or ten minutes until some of the potatoes become crispy.

Serve with hot sauce, scrambled tofu, etc.. Mmmmm!
