Recipe of the week February 25th… Caribbean food from Howardsvegansoap.com
Howard’s World famous Callaloo! * Updated *
The idea for this came to me on a lazy Saturday afternoon. I was laying around the house watching TV when a rerun of the Cosby show came on. Cliff wanted to surprise Clair by recreating their first date in his kitchen. He hires a Jamaican chef to cook this delicious meal.. Callaloo.. I had never heard of it, but it looked delicious on the show. Here’s how I’ve made it. Enjoy!
4 tablespoons oil
4 cloves garlic
3 spring onions
1 teaspoon thyme
1 bunch spinach
1 can spinach
1 medium zucchini
1 box frozen okra
2 cups soy milk
1 can coconut milk
5 cups water
salt and pepper to taste
dried red pepper (optional)
Chop garlic and spring onions. Heat oil in large saucepan. Add garlic and spring onions.
Cook for a few minutes, until tender. Add thyme first, then soy milk, coconut milk, and 3 cups water. Bring to a boil.
Add spinach, zucchini, and okra and boil for four minutes. Reduce to simmer, add remaining water, and cook for 30 minutes, stirring often and adding more water if necessary.
Add salt, pepper, and red pepper. Allow to cool. Blend in small batches. There should be some chunks, but it should mostly be a nice, green, creamy soup. Reheat and serve! Yummy!
