Recipe of the week March 24, 2008… Chinese food from Howardsvegansoap.com!
Howard’s World famous Clay Pot Eggplant!
The time I spent in China was amazing. I used to love to watch people cook using clay pots and woks in the streets. This is a great, simple recipe I've come up with which reminds me of China. It requires a clay cooking pot. You can find them at any asian market.
1 medium eggplant or a few small asian eggplants
3 cloves garlic
1 small onion
1/4 cup red cooking wine
2 Tablespoons Braggs or Soy Sauce
1 Tablespoon Agave Nectar or Maple Syrup
1 teaspoon corn starch
Soak the cooking pot in lukewarm water for 15 minutes. Do not preheat the oven.
Cut the eggplant into bitesized cubes. Chop the onion and garlic. Place everything into the clay pot except the cornstarch.
Place covered pot into oven on the lowest rack and turn the heat onto 450. After about a half an hour, add the corn starch and stir. Check after 15 minutes. Enjoy!
